 Apple and Sultana Muffins

1. 125 g butter

2. melted and cooled

3. ½ cup sugar

4. 1 egg

5. beaten lightly

6. ¾ cup milk

7. 1 tablespoon baking powder

8. ½ teaspoon ground cinnamon

9. ¼ teaspoon salt

10. 1½ cups plain flour

11. 1½ cups diced apples

12. ½ cup sultanas

13. Extra combined sugar and cinnamon for topping

 

 

Method

 

1. In a bowl combine butter, sugar, milk and beaten egg

2. Sift in flour, cinnamon, baking powder, salt and mix.

3. Fold in diced apples and sultanas

4. Spoon mixture into lightly greased muffin tins until two-thirds full. Sprinkle combined sugar and cinnamon over the top of the muffins.

5. Bake in a pre-heated 200°C (180°C fan forced) oven for 15-20 minutes or until muffins are lightly browned.
